Prepare the Creole Tomato Sauce

In a saucepan, heat the Creole tomato sauce over medium heat. Add minced garlic and diced red bell pepper. Let it simmer for about 10 minutes until the flavors meld together. Keep warm.

Prepare the Olive Relish

In a mixing bowl, combine chopped green olives, diced red bell pepper, minced garlic, and chopped parsley. Set aside.

Prepare the Calamari

In a large bowl, mix all-purpose flour, cornstarch, salt, and black pepper. Dredge calamari rings in this mixture until well coated.

Fry the Calamari

In a deep frying pan, heat the olive oil over medium-high heat. Fry the calamari in batches until golden brown, approximately 2-3 minutes per batch. Remove and drain on paper towels.

Serve

On a plate, spoon a generous amount of the Creole tomato sauce. Top with the fried calamari. Sprinkle grated Parmesan cheese over the calamari and add the olive relish on top. Serve with lemon wedges.
