Prepare the Alligator Meat

Cut the alligator tail meat into bite-sized pieces. Rinse under cold water and pat dry with paper towels.

Prepare the Breading

In a shallow bowl, combine flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper. In another bowl, whisk together eggs and milk.

Bread the Alligator Bites

Dip each piece of alligator meat into the egg mixture, then dredge in the flour-cornmeal mixture until fully coated.

Fry the Alligator Bites

Heat vegetable oil in a deep skillet over medium-high heat. Once the oil is hot, carefully add the breaded alligator bites in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
