Method
Sweet Potato Fries
Preheat & prepare
Preheat oven to 425°F (220°C). Line two large baking sheets with parchment paper or lightly oil them to prevent sticking.
Cut fries
Peel (optional) and cut sweet potatoes into 1/3- to 1/2-inch thick sticks. Aim for uniform thickness so they cook evenly. You should have about 3 cups of cut fries.
Toss with cornstarch and oil
Place cut sweet potatoes in a large bowl. Sprinkle 1 tablespoon cornstarch over them and toss to lightly coat. Add 2 tablespoons olive oil and toss until evenly coated.
Season
In a small bowl, combine 1 teaspoon kosher salt, 1 teaspoon cayenne pepper, and 1 teaspoon freshly ground black pepper. Sprinkle the spice mix over the oiled fries and toss to coat evenly.
Arrange on baking sheets
Spread fries in a single layer on the prepared baking sheets with space between pieces so hot air can circulate. Avoid overcrowding; use two sheets if necessary.
Bake
Bake for 20 minutes, then flip fries with a spatula or tongs. Rotate the pans between racks if using both. Continue baking another 10-15 minutes, or until edges are crisp and centers are tender. Total cooking time will be about 30-35 minutes depending on thickness.
Finish with parmesan
When fries are just out of the oven, sprinkle 1 tablespoon grated parmesan over them and gently toss or shake the pan so cheese melts onto fries.
Sriracha Mayo
While fries bake, whisk together 1 cup mayonnaise, 2 teaspoons sriracha, 1 tablespoon fresh lime juice, 1 teaspoon honey, and 1 teaspoon salt in a small bowl until smooth. Taste and adjust sriracha or lime to preferred heat and acidity. Refrigerate until ready to serve.
Garnish & Serve
Transfer hot fries to a large serving platter or bowl. Sprinkle with the extra 2 tablespoons grated parmesan and the 2 tablespoons thinly sliced scallions.
Lightly dust the fries with 1/4 teaspoon cayenne salt for an extra kick (optional). Serve immediately with sriracha mayo and ketchup on the side for dipping.
