Method

Prepare Spanish Rice

Cook the Rice

In a medium pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent. Add diced tomato and cook for another 2 minutes. Stir in the Spanish rice, paprika, salt, and pepper. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.

Prepare Lobster Mushroom Sofrito

Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped lobster mushrooms and cauliflower, season with salt and pepper. Cook until the vegetables are tender, about 8-10 minutes.

Make Maine Lobster Vinaigrette

Combine Ingredients

In a small bowl, whisk together cooked Maine lobster, lemon juice, lobster butter, olive oil, salt, and pepper until well combined. Adjust seasoning to taste.

Cook Alaskan Halibut

Sear the Fish

Season Alaskan halibut fillets with olive oil, salt, and pepper. In a large skillet, heat olive oil over medium-high heat. Add halibut and cook for about 4-5 minutes on each side until golden brown and cooked through.

Plate the Dish

Serve

On each plate, place a serving of Spanish rice, top with lobster mushroom sofrito, and a piece of seared halibut. Drizzle with Maine lobster vinaigrette before serving.
