Infuse the Cream

In a saucepan, combine heavy cream, star anise, and a pinch of salt. Heat over medium heat until it just begins to simmer. Remove from heat and let it steep for 15 minutes.

Prepare the Pomegranate Mixture

In another saucepan, combine pomegranate juice and sugar. Heat over medium heat, stirring until sugar dissolves. Allow it to come to a gentle simmer, then remove from heat.

Combine Mixtures

Strain the infused cream to remove star anise. Whisk the egg yolks in a mixing bowl until they become pale. Gradually add the warm cream to the yolks, whisking constantly. Then add the pomegranate mixture and vanilla extract, mixing until well combined.

Bake the Crème Brûlée

Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custard is set around the edges but slightly wobbly in the center.

Cool and Chill

Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours, or overnight for best results.

Caramelize the Sugar

Before serving, sprinkle a thin layer of granulated sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it is golden brown and crispy. Allow it to cool for a minute before serving.
