Cake Batter

Grand Cru Vanilla Syrup (optional, for extra moisture and flavor)

Method

Cake Batter

  1. 1

    Prepare and Preheat

Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans and line the bottoms with parchment paper; grease paper and lightly flour the pans, tapping out excess flour.

  2. 2

    Dry Ingredients

In a large bowl, whisk together 3 cups all-purpose flour, 3 tsp baking powder, and 1 tsp fine sea salt until evenly combined. Set aside.

  3. 3

    Cream Butter and Sugar

In the bowl of a stand mixer fitted with the paddle attachment (or using an electric hand mixer), cream 1 cup softened unsalted butter and 2.25 cups granulated sugar on medium speed until light, pale, and fluffy, about 4–6 minutes. Scrape down the bowl as needed.

  4. 4

    Add Eggs and Vanilla

Add 5 large eggs to the creamed butter and sugar one at a time, mixing on low after each addition until incorporated. Mix in 2 tsp pure vanilla extract (or vanilla bean paste) and 0.25 cups vegetable oil; mix until combined. The oil helps retain moisture.

  5. 5

    Alternate Dry and Wet Ingredients

With the mixer on low speed, add the dry ingredients in three additions alternated with the milk and buttermilk in two additions: add one-third dry, then half the combined milk (1 cup whole milk + 1 cup buttermilk divided evenly), then another third dry, then the remaining milk, then the final dry. Mix only until just combined after each addition to avoid overmixing; scrape the bowl and fold by hand if needed to ensure even batter and no streaks.

  6. 6

    Divide and Bake

Divide batter evenly among prepared pans (use a scale for accuracy or measure approx. 3 cups batter per pan). Smooth tops with an offset spatula. Bake in preheated oven 22–28 minutes, rotating pans halfway through, until a toothpick inserted into the center comes out with a few moist crumbs and tops are lightly golden. Do not overbake.

  7. 7

    Cool

Allow cakes to cool in pans on a wire rack 10 minutes. Run a thin knife around edges, invert cakes onto racks, remove parchment, and cool completely (1–2 hours) before assembling and frosting.

Grand Cru Vanilla Syrup (optional)

  1. 8

While cakes bake, combine 0.5 cups granulated sugar and 0.5 cups water in a small saucepan. Heat over medium, stirring until sugar dissolves. Bring to a gentle simmer for 2 minutes, remove from heat and stir in 1 tsp pure vanilla extract (and 1 tsp dark rum or brandy if using). Cool slightly. If using, brush each cake layer lightly with syrup to add moisture and showcase the vanilla 'Grand Cru' character.

Vanilla Buttercream Frosting

  1. 9

    Prepare Butter

Ensure 2 cups unsalted butter are well softened. In a stand mixer fitted with the paddle, beat butter on medium speed until smooth and slightly fluffy, about 1–2 minutes.

  2. 10

    Add Sugar and Cream

With mixer on low, gradually add 6 cups sifted confectioners' sugar, one cup at a time, to avoid a powdered sugar cloud. Alternate or pause occasionally to pour in 0.75 cups heavy cream and 2 tsp pure vanilla extract. Once all sugar is incorporated, increase speed to medium-high and whip frosting 3–4 minutes until light and spreadable. Add up to 1–2 tbsp extra cream if frosting is too stiff, or a tablespoon more sifted sugar if too loose.

  3. 11

    Season and Taste

Add 0.25 tsp fine sea salt and taste; adjust vanilla or salt slightly to balance sweetness. Mix briefly to combine.

Assembly and Decoration

  1. 12

Level the cooled cake layers with a serrated knife or cake leveler if needed so they stack evenly. Place the first layer on a cake board or serving stand. If using vanilla syrup, brush a thin layer over the cake surface.

  2. 13

Spread about 1 to 1.25 cups of vanilla buttercream evenly over the first layer (adjust to preference). Place second layer on top, press gently to adhere, brush with syrup if using, and spread another 1 to 1.25 cups frosting. Add the final layer and apply a thin crumb coat of frosting over entire cake to lock crumbs; chill 15–30 minutes until set.

  3. 14

Apply final coat of frosting, smoothing with an offset spatula or bench scraper for clean edges. Use remaining frosting to pipe decorations or fill a piping bag for borders.

  4. 15

Finish with decorations: sprinkle edible gold flakes or sprinkles around the sides or top, scatter fresh berries on top or around the base, and optionally garnish with scraped vanilla bean seeds for an aromatic, elegant look.

  5. 16

Chill the cake 20–30 minutes to set the frosting before serving. Bring to room temperature 30 minutes before cutting for best texture and flavor.
