Chop and toast
Chop both chocolates into uniform small pieces so they melt evenly. If using nuts, toast them: heat a dry skillet over medium, add nuts, and toast, stirring, until fragrant and lightly golden (3–5 minutes). Cool and roughly chop. Line a small tray with parchment or set out silicone molds.

Measure out cream, butter, corn syrup, salt, vanilla, and optional add-ins so everything is ready (mise en place).
Make the Ganache-like Chocolate Base

Place the chopped chocolates in a medium heatproof bowl. You want the ratio here to create a rich, stable chocolate: roughly 16 oz chocolate to 1 cup cream yields a dense, ultimate chocolate texture.

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer around the edges (small bubbles form and steam rises), about 3–5 minutes. Do not boil.

Remove the cream from heat and immediately stir in the corn syrup, sea salt, and espresso powder (if using) until dissolved.

Pour the hot cream mixture over the chopped chocolates. Let sit undisturbed for 2 minutes to soften the chocolate.

Using a whisk or spatula, gently stir from the center outward in slow concentric circles until the mixture becomes smooth and glossy. Add the butter and vanilla and continue stirring until the butter is fully incorporated and the ganache is silky. If the chocolate does not fully melt, place the bowl over a barely simmering water bath (double boiler) and stir until smooth—avoid overheating.
Flavoring, Texturing & Tempering (Optional)

If you want inclusions (nuts, dried fruit), fold them in now so they distribute evenly. Reserve a few pieces for topping if desired.

For a shiny, snap-ready finish suitable for unmolded bars, tempering is recommended. To temper: set aside 1/3 of the melted chocolate mixture and cool it (stir frequently) until it reaches ~82–84°F (28–29°C). Rewarm the remaining base gently to 88–90°F (31–32°C), then stir the cooled chocolate back in to bring the whole mixture to 88–90°F for dark chocolate. This step is optional if you are making filled chocolates or a soft dark ganache.
Mold and Finish

Lightly brush a small amount (about 1 tsp) of neutral oil into molds or the lined tray to ensure release and add sheen, or skip if using polished silicone molds.

Pour the chocolate mixture into molds or spread into the lined tray to a uniform thickness (for bars aim ~1/4–1/2 inch). Tap the mold/tray gently on the counter to release any air bubbles.

Sprinkle reserved chopped nuts, dried fruit, and a pinch of sea salt flakes on top while the chocolate is still soft so they adhere.

Let the chocolate set at room temperature until firm (1–2 hours), then transfer to the refrigerator for 15–30 minutes to fully set if desired. If you tempered the chocolate, allow to set at cool room temperature to preserve shine and snap.
Unmold and Store

Gently pop chocolates from the molds or lift the slab from the parchment and cut into bars or squares with a hot, dry knife (heat knife under hot water and dry) for clean edges.

Store finished chocolates in an airtight container in a cool, dry place (60–68°F / 15–20°C) for up to 2 weeks, or refrigerate for longer storage (bring to room temperature before serving to restore flavor and texture).
