    Prep

    Measure the shredded coconut so it is loosely packed; break up any large clumps with your fingers. Line a baking sheet with parchment paper or a silicone mat if toasting in the oven. If using the stovetop, have a large, dry skillet ready.

    Stovetop Toasting (quick method)

    Place a large dry skillet over medium heat. Add the shredded coconut in an even layer. Shake or stir frequently with a wooden spoon or spatula so the coconut toasts evenly. After 3–4 minutes the coconut will start to dry out and become fragrant; continue stirring and cooking another 2–4 minutes until the coconut turns a light golden brown. As soon as you see even golden flecks, remove the skillet from the heat and immediately transfer the coconut to the prepared baking sheet to stop cooking.

    Oven Toasting (batch method)

    Preheat the oven to 325°F (160°C). Spread the shredded coconut in a thin even layer on the prepared baking sheet. Bake for 5 minutes, then stir or shake the pan to redistribute. Bake another 3–6 minutes, watching closely, until the coconut is evenly golden brown. Remove from oven and transfer to a cool surface to stop cooking.

    Optional Flavoring & Sweetening

    While the coconut is still warm (but not hot), drizzle the vegetable oil and vanilla extract over it and sprinkle the sugar and salt evenly. Toss gently with a spatula to combine so the oil and flavorings coat the flakes. Taste and adjust: add a pinch more salt or up to 1/2 tsp more sugar if you prefer sweeter coconut. Spread the coconut back out to cool completely; this helps it crisp up.

    Cooling & Storage

    Let the toasted coconut cool completely on the baking sheet at room temperature (about 15–20 minutes). Once cool, use it immediately as a topping or store in an airtight container at room temperature for up to 1 week, or refrigerate up to 2 weeks. For longer storage, freeze in a sealed bag for up to 3 months.

    Uses

    Use toasted coconut as a topping for yogurt, ice cream, cakes, salads or mix into granola and trail mix. Re-crisp slightly in a 300°F (150°C) oven for 5 minutes if it softens.
