Strawberry Marmalade

Prepare strawberries: hull and dice 2 cups fresh strawberries so pieces are roughly 1/4–1/2 inch for a chunky marmalade consistency.

Combine and macerate: in a small saucepan combine diced strawberries, 1 tablespoon granulated sugar, 1 teaspoon fresh lemon juice, and 2 tablespoons water. Stir to combine and let sit 10 minutes to macerate and draw juices.

Cook marmalade: place saucepan over medium heat. Bring to a gentle simmer and cook, stirring frequently and mashing some pieces with the back of a spoon, until mixture thickens and reduces to a spreadable jam — about 8–10 minutes. If it splatters, reduce heat to low. Taste and add up to 1/2 teaspoon extra lemon juice or 1/2 tablespoon sugar to balance acidity/sweetness.

Cool: remove from heat and let the marmalade cool to room temperature. Transfer to a small bowl and refrigerate if preparing ahead; it will thicken further as it cools.
Cheesecake Filling

Soften and beat: ensure 8 oz cream cheese is softened to room temperature. In a medium bowl, beat the cream cheese with an electric mixer on medium speed until smooth and free of lumps, about 1–2 minutes.

Lighten with cream: with the mixer on low, pour in 1 tablespoon heavy cream and then increase speed to medium-high for 20–30 seconds to make a light, spreadable cheesecake filling. The texture should be smooth and pipeable; if too stiff, add up to 1 teaspoon more cream.

Prep croissants: if croissants are cold, warm them in a 325°F (160°C) oven for 5–7 minutes just to take the chill off and refresh the crust (do not overbake). Let cool slightly so they’re warm but not hot.

Slice: using a serrated knife, carefully slice each croissant horizontally about two-thirds of the way through so the top lifts like a hinge (or slice fully into halves if preferred).

Butter: spread approximately 1/3 teaspoon of softened unsalted butter on the cut interior of each croissant half (optional for richness).

Fill with cheesecake: spoon or pipe about 2 tablespoons of the cheesecake filling onto the bottom half of each croissant, spreading to the edges but leaving a small border so filling won’t ooze out.

Add marmalade: top the cheesecake layer with 1 heaping tablespoon of the cooled strawberry marmalade on each croissant. If marmalade is very runny, drain excess syrup first so the croissant doesn’t become soggy.

Top and finish: arrange 2–3 thin fresh strawberry slices on top of the marmalade for each croissant. Close the top half (or place the top back on) and dust with powdered sugar (about 1/2 teaspoon per croissant).

Garnish and serve: optionally tuck a small mint leaf beside the strawberry slices. Serve immediately so croissants remain flaky. If making ahead, assemble up to 1 hour before serving and keep refrigerated; bring to room temperature 10–15 minutes before serving for best texture.
