Prepare and Bake Puff Pastry
Preheat oven to 200°C (400°F). Line two baking sheets with parchment. Unfold or roll each thawed puff pastry sheet to smooth creases to about 1/8 inch (3 mm) thickness. Trim edges to make neat rectangles of equal size (about 30 x 20 cm each). Prick the surface all over with a fork to reduce excessive puffing. Place a second parchment sheet on top and weight with another baking sheet or baking steel to encourage even layers. Bake for 15–20 minutes until golden and crisp. Remove top weight and continue baking 3–5 minutes if the center needs more color. Transfer to a wire rack to cool completely.

When cool, place one pastry sheet top-side down on a baking sheet. Sprinkle 1½ tbs granulated sugar evenly across the surface and dot with small pieces of the 1 tbs butter. Using a kitchen torch or under a hot broiler, caramelize the sugar until amber and glossy, watching carefully to avoid burning. If using broiler, broil 1–2 minutes—watch constantly. Let caramel harden. Repeat for the second sheet. If caramel seizes or cracks, press gently with a flat spatula to smooth before fully set. Reserve a small piece of pastry to crumble for garnish if desired.
Vanilla Bean Pastry Cream (Crème Pâtissière)

Infuse Milk
In a medium saucepan, combine the milk and the scraped vanilla bean seeds and pod (or 1 tsp vanilla extract). Heat over medium until it just reaches a simmer (small bubbles at edges). Remove from heat and let sit 10 minutes to intensify flavor if using a vanilla bean pod. Remove the pod after steeping.

Whisk Yolks and Dry Ingredients
In a bowl, whisk the egg yolks with the 120 g granulated sugar until pale and slightly thickened. Whisk in the 60 g cornstarch until smooth and lump-free.

Temper and Cook
Slowly pour about one-third of the hot milk into the yolk mixture while whisking constantly to temper the eggs. Then pour the tempered mixture back into the saucepan with the remaining milk. Return saucepan to medium heat and cook, whisking constantly, until the mixture thickens and comes to a boil—about 2 minutes after thickening. Continue cooking for 30–60 seconds to remove raw starch taste. Remove from heat.

Finish Pastry Cream
Immediately whisk in the 50 g cold diced butter until fully incorporated and glossy. Transfer the pastry cream to a shallow bowl, press a sheet of plastic wrap directly onto the surface to prevent a skin, and cool to room temperature, then chill in refrigerator until cold (at least 2 hours).

Whip Cream
Chill a mixing bowl and whisk or beaters. Pour the 300 ml heavy cream into the bowl, add 30 g icing sugar and 1 tsp vanilla extract, and whip to medium-stiff peaks. Be careful not to overwhip—peaks should hold but still be smooth.

Make Diplomat Cream
Remove chilled pastry cream from refrigerator and loosen by whisking briefly. Fold one-third of the whipped cream into the pastry cream to lighten it, then gently fold in the remaining whipped cream until fully combined and smooth. Keep chilled until assembly.
Assembly & Serving

Layer the Napoleon
Trim the cooled caramelized pastry sheets to remove uneven edges if needed. Place the first caramelized pastry sheet caramel-side up on a serving board. Pipe or spread an even layer (about 1 cm) of diplomat cream over the pastry, leaving a small border. Place the second caramelized pastry sheet on top, pressing gently to sandwich. If you prefer a three-layer Napoleon, you can split one pastry into two thinner layers or bake an extra sheet and layer in three thin layers with cream between each.

For a classic rectangular Napoleon, use a long offset spatula to level the top. Dust lightly with 15 g powdered sugar or scatter toasted sliced almonds/berries for garnish. Chill the assembled Napoleon for at least 30 minutes to set the cream and make slicing cleaner.

To serve, use a sharp serrated or very sharp chef's knife warmed in hot water and wiped dry between slices to get clean cuts through caramel and layers. Serve chilled. Leftovers: store refrigerated, covered, up to 2 days (pastry will soften over time).
