    Prepare the mango

    Wash the mangoes. Stand one mango upright and slice off the cheeks along both sides of the large central seed. Score the flesh of each cheek in a grid pattern without cutting through the skin, then invert the cheek and slice or scoop the cubes off into a bowl until you have about 2 cups of mango cubes.

    Dress the mango

    Add the fresh lime juice, lime zest, and honey (or agave) to the bowl with the mango cubes. Gently toss to coat so the fruit is evenly glazed. Taste and adjust: add a little more honey if you want sweeter, or more lime juice to brighten.

    Season and garnish

    If you like a spicy-sour contrast, sprinkle a pinch of ground chili powder or tajín over the mango and toss once more. Transfer to a serving bowl and sprinkle with chiffonaded mint leaves for freshness.

Optional Serving Accompaniments

    Mango parfait (optional)

    Layer 1/4 cup mango cubes, 2 tbsp yogurt, and 1 tbsp granola in a small glass. Repeat once more and finish with mango on top. Sprinkle toasted coconut flakes or chopped pistachios as a crunchy finish.

    Serve immediately or refrigerate the dressed mango for up to 24 hours. If chilled, add mint and crunchy toppings just before serving to preserve texture.
