Method

Tea

  1. 1

    Heat water

Pour 2 cups (about 475 ml) of fresh cold water into a kettle and bring it to a near-boil. Aim for about 200–205°F (just off a rolling boil) — ideal for black teas like Earl Grey.

  2. 2

    Preheat teapot or cup

If you have time, pour a little hot water into the teapot or cup to warm it, swirl, then discard. This helps maintain infusion temperature.

  3. 3

    Measure tea

Place 2 level teaspoons of loose-leaf Earl Grey into an infuser or teapot (or use 1 tea bag per cup).

  4. 4

    Steep

Pour the hot water over the tea leaves. Cover and steep for 3–4 minutes. Steep 3 minutes for a lighter cup, 4 minutes for fuller flavor. Avoid steeping longer than 5 minutes to prevent bitterness.

  5. 5

    Strain and serve

Remove the infuser or strain the leaves into your cup. If you used a tea bag, lift and lightly press (do not squeeze aggressively) to release flavor, then discard.

Optional Add-ins

  1. 6

    Milk

If you prefer milk, add about 2 tablespoons to the brewed tea and stir. Heat milk first if you want a hotter cup.

  2. 7

    Sweetener

Add honey or sugar to taste (start with 1 teaspoon), stir until dissolved.

  3. 8

    Lemon

If using lemon, squeeze one wedge into the tea. Do not add milk and lemon together (they will curdle).
