    Combine ingredients

    In a bowl or large jar, whisk together 0.5 cups chia seeds, 1.5 cups almond milk, 2 tablespoons maple syrup, 0.5 teaspoon vanilla extract and a pinch of salt until evenly mixed.

    Rest and thicken

    Cover and refrigerate for at least 2 hours, preferably 4 hours or overnight. After 20–30 minutes, stir or shake the mixture once to break up any clumps and redistribute seeds, then allow to continue thickening. The pudding should be spoonable and thickened (if too thick, stir in 1–2 tablespoons milk; if too thin, add 1 tablespoon chia and refrigerate 30–60 minutes).

Strawberry Cashew Yogurt

    Prepare cashews

    If you haven't pre-soaked cashews, quick-soak by boiling them in water for 15 minutes, then drain. Soaked cashews blend to a creamier texture.

    Blend yogurt

    Place 0.5 cups soaked cashews, 0.5 cup water, 1 cup hulled strawberries, 1 teaspoon lemon juice, 1 tablespoon maple syrup and 1/4 teaspoon salt in a high-speed blender. Blend on high until completely smooth and creamy (30–60 seconds), scraping down sides as needed. Taste and adjust sweetness or lemon for brightness. Chill in fridge until ready to layer.

Assembly & Toppings

    Layer the parfaits

    Divide the chilled chia pudding among 2–3 serving glasses or bowls (depending on desired serving size). Spoon or pipe a generous layer of the strawberry cashew yogurt over the chia pudding (about half the yogurt total across servings).

    Add berries and crunch

    Top each serving with the fresh mixed berries (divide 1 cup among servings) and sprinkle 2 tablespoons toasted sliced almonds or chopped cashews across all portions. If you like extra sweetness, drizzle up to 1 tablespoon additional maple syrup distributed among servings.

    Garnish and serve

    Finish with a small mint leaf on each serving if using. Serve immediately, or refrigerate for up to 24 hours (note: chia pudding will thicken further over time; stir before serving).
