    Chill glass

    Place a coupe or chilled rocks glass in the freezer for a few minutes or fill with ice and cold water to chill while you prepare the cocktail.

    Rinse (optional)

    If using absinthe: add 0.25 tsp absinthe to the chilled glass, swirl to coat the inside, then discard the excess (pour out or blot with a paper towel). This gives a subtle anise note reminiscent of classic pre-prohibition cocktails.

    Build and stir

    In a mixing glass, add the rye whiskey (2 oz), dry vermouth (0.5 oz), sweet vermouth (0.5 oz), orange liqueur (0.25 oz), 2 dashes Angostura bitters and 1 dash orange bitters. Add large ice cubes (3 pieces). Stir gently for 20–30 seconds until well chilled and slightly diluted (the mixing glass should frost on the outside).

    Strain

    Discard ice/water from the chilled serving glass. Double-strain the mixture (using a Hawthorne and a fine sieve if available) into the chilled coupe or rocks glass. If serving on the rocks, strain over one large large ice cube.

    Garnish and finish

    Express the oils from a lemon peel over the surface of the cocktail by holding the peel with the outer skin facing down and giving it a firm snap. Rub the peel around the glass rim and drop it into the drink as garnish. Serve immediately.
