Cocktail

Method

Cocktail

  1. 1

    Prepare honey syrup

If you don't have honey syrup ready: combine equal parts honey and hot water (for this recipe 1 tablespoon honey + 1 tablespoon hot water), stir until fully combined and cool before using.

  2. 2

    Build the drink

Add the blended Scotch, smoky single malt (peat-forward) float, sweet vermouth, amaro, honey syrup, fresh lemon juice, Angostura bitters, and orange bitters into a mixing glass.

  3. 3

    Add ice and stir

Add several large ice cubes to the mixing glass (enough to chill without diluting too fast). Stir the mixture briskly for 20–30 seconds until well chilled and properly diluted (about 15–25% dilution for a stirred spirit-forward cocktail).

  4. 4

    Prepare serving glass

Place a large clear rocks glass or Old Fashioned glass in front of you and add one large ice cube (or two medium cubes).

  5. 5

    Strain

Double-strain (if desired) the chilled cocktail from the mixing glass into the prepared rocks glass over the ice using a Hawthorne or julep strainer and a fine mesh strainer to remove any small ice shards or citrus pulp.

Finish & Garnish

  1. 6

    Express and garnish

Hold the orange peel over the glass, skin-side down about 4–6 inches above the surface, give a firm twist to express the oils over the drink, then rub the peel around the glass rim and drop it in as garnish. Add the Luxardo or brandied cherry on a pick and rest it on the cube if using.

  2. 7

    Final note

Serve immediately. The whisky base with a smoky float should be noticeable but balanced by the vermouth and amaro; adjust future batches by reducing the peaty float if too strong or increasing honey syrup if you prefer slightly sweeter.
