Method
Cake Batter
In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.
In a separate bowl or large measuring cup, beat the eggs lightly, then whisk in the milk, vegetable oil, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick.
Carefully stir in the hot water in two additions (batter will thin). This bloom of hot water deepens the chocolate flavor and creates a moist crumb.
Divide the batter evenly between the prepared pans (use a scale or measure by volume). Tap pans gently on the counter to remove large air bubbles.
Bake on the middle rack for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no raw batter.
Allow cakes to cool in the pans for 10 minutes, then run a knife around edges, invert onto wire racks, remove parchment, and cool completely before assembling.
Salted Caramel
Slowly pour in the heavy cream while stirring; mixture will bubble up. Stir until smooth. If any hardened bits form, return to low heat and stir until dissolved.
Stir in 1 teaspoon fine sea salt. Taste and adjust salt to preferred balance between sweet and salty. Let caramel cool to warm (about 15–20 minutes) so it thickens slightly but remains pourable.
Chocolate Ganache & Finish
Place chopped chocolate in a heatproof bowl. In a small saucepan, bring 3/4 cup heavy cream just to a simmer — do not boil — then pour the hot cream over the chocolate. Let sit untouched for 2–3 minutes to soften the chocolate.
Stir gently from the center outward until the mixture becomes glossy and smooth. If using, stir in 1 tablespoon unsalted butter for extra shine and silkiness.
Let the ganache cool at room temperature until it thickens to a spoonable but still pourable consistency (about 20–30 minutes). Stir occasionally to encourage even cooling.
Once the cake layers are completely cool, place one layer on a serving plate or cake stand. If the cake domed, level the top with a serrated knife.
Spoon or pour about half of the warm-but-not-hot salted caramel over the first layer and spread to the edges. Reserve remaining caramel for the top and for serving.
Place the second cake layer on top. Pour the ganache over the top, starting in the center and using an offset spatula or the back of a spoon to smooth it and allow it to drip over the sides for a gentle drip effect.
Immediately drizzle the reserved salted caramel in lines or a lattice over the ganache. Sprinkle the surface with coarse sea salt and a small pinch of toasted flaky salt for contrast.
If using, scatter chopped toasted pecans or peanuts around the base or on top for crunch, or pipe whipped cream rosettes around the edge to finish.
Chill the assembled cake in the refrigerator for 20–30 minutes to set the ganache and caramel, then bring back to room temperature about 15 minutes before serving for best texture and flavor.
