Combine and dissolve
In a heatproof container, stir the raw honey with hot water until fully dissolved and uniform.

If using gelatin: sprinkle gelatin over 1 tablespoon cold water to bloom for 1–2 minutes, then stir into the warm honey mixture until dissolved. Chill the mixture in the refrigerator until it begins to set (about 1–2 hours).

Clarify and strain
Once the honey mixture has thickened slightly (or immediately if not using gelatin), gently warm to pour through a fine mesh or cheesecloth into a clean container to remove impurities. Store refrigerated for up to 2 weeks. Use 0.5 oz per cocktail.

Wet shake
Open the shaker, add a generous handful of ice (or about 4–6 large cubes). Seal and shake vigorously for 15–20 seconds until the shaker is very cold to the touch and the mixture is well chilled and frothy.

Strain the cocktail through a fine mesh strainer into a chilled coupe or Nick & Nora glass to remove small ice shards and any coagulated bits. This yields a silky, clear-topped drink with a stable foam.

If you prefer not to use raw egg white, substitute 0.5 oz pasteurized liquid egg white or 3/4 tsp aquafaba; adjust dry shake time to achieve foam.
