    Prepare

    Chill a coupe or Nick & Nora glass by filling it with ice water or placing it in the freezer while you assemble the cocktail.

    Add gin, light rum, fresh lemon juice, simple syrup, Curaçao, egg white, and Angostura bitters to a cocktail shaker (without ice) for a dry shake. The 30–60 second dry shake emulsifies the egg white and creates a velvety foam.

    Add a generous handful of ice to the shaker and shake vigorously for 15–20 seconds to chill and properly dilute the cocktail. The second shake should be hard enough to make the exterior of the shaker frosty.

    Discard ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine-mesh (or julep) strainer to remove ice shards and produce a smooth foam.

Garnish

    Express a lemon twist over the surface of the drink by holding the twist skin-side down and giving it a firm squeeze to release oils, then rub the twist around the rim and lay it on the foam.

    Optionally, dust a light sprinkle of grated nutmeg over the foam for an aromatic finish. Serve immediately.
