Make blood orange simple syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add 1 tablespoon fresh blood orange zest. Heat over medium, stirring until sugar dissolves and mixture just comes to a simmer. Reduce heat and simmer gently for 2 minutes to infuse zest. Remove from heat and let steep 15 minutes. Strain through a fine mesh sieve to remove zest and cool to room temperature. Transfer to a bottle and refrigerate; yields about 1 cup (8 fl oz).

Juice and measure

Juice fresh blood oranges until you have about 2 oz (about 1 small blood orange) of juice. Measure 0.5 oz fresh lime juice and set aside.

Build the hiball

Fill a highball glass with ice (cubes or crushed). Pour in 1.5 oz vodka, 2 oz fresh blood orange juice, 0.5 oz blood orange simple syrup, and 0.5 oz fresh lime juice. Add 2 dashes Angostura bitters.

Top and stir

Top the mix with about 3 oz chilled club soda. Gently stir once or twice with a bar spoon (just enough to combine without losing sparkle).

Garnish & Serve

Finish by placing a blood orange wheel on the rim or float it on top. Optionally slap a mint sprig between your palms to release aromatics and tuck it into the glass. Serve immediately with a straw.
