Method
Make Honey-Ginger Syrup
Combine and simmer
Combine 1/2 cup honey, 1/2 cup water and a 1-inch piece of fresh ginger (smashed and sliced) in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the honey dissolves.
Infuse and cool
Lower heat and simmer gently for 5 minutes to infuse ginger. Remove from heat and let cool to room temperature, then strain out the ginger. Transfer syrup to a jar and refrigerate. (Syrup keeps 2 weeks.)
Build the Sycamore Lane
Chill an old-fashioned glass or coupe by filling it with ice water; set aside.
Fill a cocktail shaker with ice cubes (enough to chill ingredients rapidly). Add 2 oz bourbon, 0.5 oz pear brandy, 0.75 oz fresh lemon juice, 0.5 oz honey-ginger syrup, and 0.25 oz dry vermouth to the shaker.
Add 2 dashes of Angostura bitters into the shaker.
Shake vigorously for 10–12 seconds until the shaker is very cold and slightly frosted. This both chills and dilutes the drink to balance flavors.
Discard ice water from the chilled glass. Strain the cocktail through a fine strainer into the chilled glass over one large ice cube or serve neat in the coupe if preferred.
Garnish by skewering a thin pearslice and a small piece of candied ginger on a cocktail pick and resting it across the rim. Express a lemon peel over the drink if you like and discard or tuck it into the glass.
Serve immediately.
