Prepare mixture

In a medium bowl combine 1 lb ground beef, 2 tablespoons fine dry breadcrumbs, 2 tablespoons milk, 1 teaspoon salt and 1/4 teaspoon black pepper. Use your hands or a fork to mix gently until just combined — avoid overworking so patties stay tender.

Form patties

Divide the mixture into 4 equal portions (about 4 oz each). Lightly form each into a round patty about 3 to 3.5 inches in diameter and about 1/2 inch thick. Press a shallow dimple in the center of each patty with your thumb to help prevent puffing while cooking.

Cook patties

Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon butter and let it melt and coat the surface. Place the patties in the skillet, leaving space between them. Cook until the underside is browned, about 3–4 minutes. Flip and cook the second side 2–3 minutes for a medium, or longer to reach desired doneness. During the last 30–45 seconds of cooking, place a slice of cheese on each patty, cover the pan briefly to melt the cheese.

While patties cook, split the 4 buns and spread the remaining 1 tablespoon butter lightly on the cut sides. In a separate skillet or on a griddle over medium heat, toast the buttered cut sides until golden, about 1–2 minutes. Alternatively, use a toaster oven.

Toppings & Condiments

Assemble each burger: place the cheese-topped patty on the bottom half of a toasted bun. If using, add a small lettuce leaf and half slice of tomato to keep portions kid-sized. Add 2 pickle slices per burger. Offer ketchup (about 1 tablespoon per burger) and mustard (about 1/2 teaspoon per burger) on the top bun or on the side for dipping so children can choose their amount.

Serve immediately while hot with optional sides like carrot sticks, apple slices, or oven fries.
