Prepare glass
Fill a highball glass (or Collins) about 3/4 full with ice cubes. Using plenty of ice keeps the drink cold and slightly dilutes the ginger beer for balance.
Build cocktail
Pour 4.5 oz ginger beer into the iced glass. Pour gently so carbonation is preserved.
Float the rum
Carefully pour 2 oz dark rum over the back of a bar spoon or slowly down the inside of the glass so the rum floats on top of the ginger beer, creating the characteristic ‘dark’ layer. If preferred, you can pour directly for a more mixed drink.
Add lime
Squeeze the juice of 1/4 of a fresh lime (about 1/2 tsp to 1 tsp) into the drink, then drop in a lime wedge as garnish. Adjust the lime to taste if you prefer a brighter acidity.
Service
Serve with a straw or stirrer. Instruct the drinker to gently stir before drinking if they want a balanced flavor, or leave layered and sip through the lime garnish for a traditional presentation.
