Brew and cool tea (prepare ahead)

Brew strong black tea (use 1 tea bag or 1 tsp loose leaf per 8 oz) and chill until cold. You can prepare ice tea ahead and store in the refrigerator. For immediate use, brew hot and let sit with ice to cool for 10–15 minutes.

Build the cocktail

Fill a highball or Collins glass with ice (about 1 cup). Pour 2 oz bourbon, 0.75 oz fresh lemon juice and 0.5 oz simple syrup over the ice.

Add tea

Top the glass with 4 oz chilled iced black tea. Gently stir once or twice with a bar spoon to combine bourbon, lemon, syrup and tea without over-diluting.

Float the peach liqueur

Carefully pour 1 oz peach liqueur over the back of a spoon held just above the drink’s surface or pour slowly down the inside of the glass so it floats or partially blends on top, creating a distinct peach layer.

Garnish and serve

Garnish with a lemon wheel on the rim and an optional fresh peach slice. Serve with a straw and stirrer so the drinker can combine the peach liqueur into the drink as desired.
