Preheat oven to 350°F (175°C). In a medium bowl combine chocolate wafer crumbs, granulated sugar, and cocoa powder (if using). Pour in the melted butter and stir until the mixture resembles wet sand and holds together when pressed.

Prepare crust mixture

Press the crumb mixture into the bottom (and slightly up the sides if desired) of a 9-inch springform pan or a square 8x8 pan to form an even crust layer about 1/4–1/2 inch thick. Use the bottom of a measuring cup to compact it firmly.

Bake the crust for 8–10 minutes to set. Remove from oven and let cool while preparing the cheesecake and mousse. Reduce oven temperature to 325°F (160°C) if you'll bake cheesecake chunks in the same oven.

Increase oven to 325°F (160°C) if lowered. In a bowl beat the room-temperature cream cheese until smooth. Add sugar and beat until incorporated. Mix in the egg, vanilla extract, and 1 tablespoon heavy cream until smooth and just combined — do not overmix.

Make quick baked cheesecake

Line a small loaf pan or 8x4-inch pan with parchment and spoon the cheesecake batter in a thin layer (or use a mini muffin tin for many small chunks). Bake for 12–15 minutes until set but still slightly jiggly in the center. Remove and cool to room temperature, then chill in the refrigerator at least 30 minutes to firm. Once chilled, cut into 1/2-inch cubes (or use small squares/mini rounds if made in muffin tin).

Place chopped chocolate and butter in a heatproof bowl. Set over a pan of simmering water (double boiler) or microwave in 20–30 second bursts, stirring until fully melted and smooth. Stir in hot espresso/coffee and vanilla. Let cool slightly (to warm, not hot).

Melt chocolate

In a small bowl whisk together the egg yolks and granulated sugar until pale and slightly thickened (about 1–2 minutes). Temper the yolks by whisking in 1–2 tablespoons of the warm melted chocolate mixture, then slowly whisk the yolk mixture back into the remaining chocolate until smooth. (If you prefer not to use raw yolks, substitute with a stabilized whipped cream-only mousse, but proportions will change.)

Prepare egg yolk mixture

In a chilled bowl, whip the cold heavy cream with the powdered sugar to soft-medium peaks using a hand or stand mixer. Reserve about 1/3 cup whipped cream for topping or garnish if desired.

Whip cream

Fold one-quarter of the whipped cream into the chocolate base to loosen it, then gently fold in the remaining whipped cream until fully incorporated and airy, keeping the mousse light.

If using store-bought caramel, warm it slightly in the microwave for 10–15 seconds to make it pourable. Chop or crush the toffee pieces coarsely so they remain in bite-sized chunks in the final dessert.

Toast pecans and almonds lightly in a dry skillet over medium heat for 3–4 minutes until fragrant, tossing frequently. Let cool. Rough chop pecans and slice or chop almonds as desired.

Reserve a small handful of nuts and toffee pieces for garnish.

Place the cooled crust on a flat surface. Spoon a thin layer (about 1/3) of the chocolate mousse over the crust and spread evenly.

Scatter about half of the cheesecake cubes evenly over this layer, pressing them down gently so they are partly embedded.

Drizzle about half of the caramel sauce in a thin ribbon over the cheesecake chunks and sprinkle some chopped toffee and one-third of the chopped nuts over the caramel.

Add another 1/3 of the mousse and smooth. Add remaining cheesecake chunks in an even layer, then drizzle the remaining caramel and sprinkle remaining toffee and nuts.

Top with the remaining mousse and smooth the surface. If desired, press a few reserved toffee/nut pieces into the top for texture.

Drizzle extra melted chocolate or ganache decoratively over the top and lightly sprinkle flaky sea salt if using. Dust with cocoa powder and/or scatter chocolate shavings for a finished look.

Cover loosely and refrigerate at least 4 hours, preferably overnight, to let the mousse set and flavors meld. For firmer slices, chill at least 6–8 hours.

Run a knife around the pan edge (if using springform release base) and slice with a hot, clean knife for neat pieces. Garnish each slice with reserved whipped cream (optional), extra toffee, nuts, and a drizzle of caramel or chocolate. Serve chilled.
