Chill the bottle

Place the bottle of sparkling wine in an ice bath (equal parts ice and cold water) or the refrigerator for at least 3–4 hours, or until it reaches 6–8°C (43–46°F). If short on time, submerge for 20–30 minutes in an ice bath.

Prepare glassware

Place the champagne flute(s) or white wine glass(es) in the freezer for 10–15 minutes or rinse with very cold water to lightly chill. Avoid freezing glass for extended periods to prevent cracking.

Remove foil and cage

When ready to serve, remove the foil from the bottle top and loosen the wire cage while keeping a thumb over the cork to prevent accidental pop. Work slowly and gently to control pressure.

Open the bottle

Hold the bottle at a 45° angle, keeping one hand on the cork. Twist the bottle (not the cork) slowly while holding the cork to ease it out with a soft sigh, not a loud pop. This preserves the finest mousse (bubbles).

Optional: light spritz

If you prefer a lighter, more delicate effervescence (similar to an 'Americano' style), add 2–4 tablespoons (0.5–1/4 cup) of lightly carbonated mineral water into the flute before pouring. This is optional and will lightly soften the wine's intensity.

Pour

Tilt the flute and pour in two stages: fill the glass one-third, allow the mousse to settle for 10–15 seconds, then top up to about three-quarters full. Avoid overfilling to preserve aroma and bubbles.

Garnish & Service

Cut a thin lemon twist using a paring knife or peeler. Gently express the oils over the surface of the filled glass by holding the twist skin-side down and giving it a quick fold, then drop it into the flute or hang on the rim as a garnish.

Serve immediately to appreciate the wine’s lively mousse and fresh aromatics. Keep the remaining bottle chilled in the wine bucket/ice bath. To re-seal an opened bottle, use a sparkling wine stopper and store upright in the refrigerator; consume within 1–2 days for best effervescence.
