Method

Prep & cook noodles

Soak or boil noodles

Bring a large pot of water to a rolling boil. Add the dangmyeon (sweet potato noodles) and boil for 6–8 minutes, stirring occasionally, until tender but slightly chewy. If using package instructions, follow them but avoid overcooking. Drain and rinse under cold water to stop cooking. Cut the noodles with kitchen scissors 4–6 times to shorten to bite-size lengths (about 10–12 inches to 3–4 inch pieces).

Toss the cooled noodles with 1 tablespoon soy sauce and 1 teaspoon sesame oil to season and prevent sticking. Set aside.

Clean and slice shiitake mushrooms into thin strips (if using dried, rehydrate in warm water until soft, squeeze out water, then slice).

Julienne the carrot into matchsticks (about 1 cup). Slice the yellow onion thinly (about 1/2 cup). Remove seeds and slice the red bell pepper into thin strips (about 1/2 cup). Trim spinach, wash thoroughly and blanch: bring a small pot of water to boil, add a pinch of salt, blanch spinach for 20–30 seconds until wilted, drain and rinse under cold water. Squeeze out excess water and roughly chop into 1–2 inch lengths.

Heat 1 tablespoon neutral oil in a nonstick or stainless pan over medium-high heat. Add mushrooms and sauté for 2–3 minutes until softened. Add 1/2 tablespoon soy sauce and 1/4 teaspoon sugar, cook 1 minute more. Remove to a bowl.

In the same pan, add 1/2 tablespoon oil. Sauté carrots for 2–3 minutes until slightly softened but still crisp. Remove and keep separate. Sauté onion in the pan with a tiny pinch of salt for 1½–2 minutes until translucent; remove. Quickly stir-fry the bell pepper for 1 minute; remove. Keep all vegetables separate to preserve color and texture.

If using beef: thinly slice and marinate with 1 tablespoon soy sauce, 1/2 teaspoon sesame oil, 1/2 teaspoon sugar, and a pinch of black pepper for 10 minutes. Heat 1 tablespoon oil in the pan and stir-fry beef quickly over high heat until just cooked (1–2 minutes). Remove.

For eggs: beat 2 large eggs with a pinch of salt. Heat a nonstick pan over medium heat with a little oil, make a thin omelet, cook until set, cool slightly and roll up, then slice into thin strips (julienne). Set aside.

Assemble & finish

In a large mixing bowl or the now-empty wok, combine the prepared noodles, sautéed vegetables (mushrooms, carrots, onion, bell pepper), chopped blanched spinach, cooked beef (if using), and egg strips. Add the remaining sauce components: 5 tablespoons soy sauce (accounting for the small amounts used earlier), 1 tablespoon sesame oil, 1 tablespoon sugar, minced garlic, 1/2 teaspoon black pepper, and toasted sesame seeds. Toss thoroughly with tongs or chopsticks until everything is evenly coated and heated through. Taste and adjust seasoning: add salt or more soy sauce for saltiness, more sesame oil for fragrance, or a pinch more sugar if needed.

Once well combined and heated (2–3 minutes over medium heat if reheating in a wok), transfer to a serving platter. Sprinkle additional sesame seeds and sliced green onions on top. Serve warm or at room temperature.
