Duck Preparation

Preheat the Oven

Preheat your oven to 375°F (190°C).

Prepare the Duck

Remove the giblets from the duck cavity and pat the duck dry with paper towels. Season the duck inside and out with salt and black pepper.

Add Aromatics

Stuff the duck cavity with garlic cloves and fresh thyme to enhance flavor.

Rub with Olive Oil

Rub the outside of the duck with olive oil to help achieve a golden-brown skin.

Roast the Duck

Place the duck breast-side up on a roasting rack in a roasting pan. Roast for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

Port Wine Cream Sauce Preparation

Sauté Shallots

In a saucepan over medium heat, melt butter and add finely chopped shallots. Sauté until they are translucent, about 3-4 minutes.

Add Port Wine

Pour the port wine into the saucepan and bring to a boil. Reduce the heat and let it simmer for about 10 minutes, allowing it to reduce by half.

Stir in Cream

Slowly stir in the heavy cream and cook for an additional 5-7 minutes, stirring occasionally until the sauce thickens slightly.

Season the Sauce

Season the sauce with salt and black pepper to taste. Remove from heat.
