Rice & Broth
Bloom saffron
Crush saffron threads lightly between your fingers and steep in 2 tablespoons of the hot vegetable stock for 5–10 minutes to release color and aroma.
Heat stock
Keep the remaining vegetable stock hot in a small saucepan over low heat; stir in smoked paprika and the bloomed saffron (including the liquid) and keep warm.
Toast rice
In a 10–12 inch shallow paella pan or wide skillet over medium heat, add 1 tablespoon olive oil. Add the rice and stir constantly for 1–2 minutes until grains are glossy and slightly toasted.
Vegetables
Prepare eggplant
In a separate sauté pan, heat 1 tablespoon olive oil over medium-high. Add cubed eggplant, a pinch of salt, and sauté until golden and just tender, 6–8 minutes. Transfer to a plate and set aside.
Sweat aromatics
Reduce heat under paella pan to medium. Add the remaining 1 tablespoon olive oil and the butter. Add chopped onion and cook 4–5 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
Combine vegetables
Stir the sautéed eggplant, broccoli florets, thawed peas, halved grape tomatoes (reserve a few halves for garnish), and piquillo pepper strips into the paella pan, distributing them evenly around the rice.
Assembly & Cooking
Add stock to rice
Pour the warm saffron-infused stock evenly over the rice and vegetables in the paella pan. Do not stir after this point — gently shake the pan once to level the mixture. Taste the liquid and add up to the remaining 1/4 teaspoon salt if needed.
Simmer
Increase heat to medium-high until the broth comes to a gentle boil, then reduce to medium-low to maintain a steady simmer. Cook uncovered for 12–15 minutes, rotating the pan occasionally so it cooks evenly, until most of the liquid is absorbed and rice is tender but still has slight bite.
Create socarrat (optional)
For a toasted bottom crust (socarrat), increase heat to medium-high for the last 1–2 minutes until you hear faint crackling. Be careful not to burn — the goal is a lightly toasted bottom with a toasty aroma.
Rest
Remove the pan from heat and immediately cover loosely with a clean kitchen towel. Let rest for 5 minutes to finish steaming and to allow flavors to meld.
Finish & Serve
Finish
Uncover and gently loosen the top of the paella with a spatula to fluff lightly. Scatter reserved grape tomato halves and a few extra piquillo strips on top for color. Stir in salsa verde in small spoonfuls across the surface so diners can get bright herb flavor with each bite.
Garnish & serve
Sprinkle chopped parsley, grind black pepper over the top, and arrange lemon wedges around the pan. Serve directly from the paella pan family-style, allowing each person to squeeze lemon over their portion.
