Prepare cheeses
Remove cheeses from the refrigerator 20–30 minutes before starting so they come closer to room temperature. This makes blending smoother.
Crumble the Valdeón-style blue cheese into a medium mixing bowl. Break into small pieces with a fork so it will combine evenly.
Add the cream cheese and mascarpone to the bowl. Using a rubber spatula or electric hand mixer (low speed), begin folding the cheeses together until mostly combined.
Add the softened butter and pour in the whole milk and lemon juice. Continue mixing (hand mixer on low or by vigorous stirring) until the mixture is smooth, spreadable but still retains some blue-vein texture. If mixture is too stiff, add an additional 5–10 ml milk, 1 teaspoon at a time, until desired consistency is reached.
Season the mixture with the sea salt and freshly ground black pepper. Taste and adjust: add a pinch more salt or up to 0.5 tsp more pepper if you want more bite. Be cautious: the blue cheese is already salty and sharp.
For a smoother, whipped texture (optional), transfer the mixture to a food processor and pulse 6–8 times until uniformly creamy, being careful not to over-process — you want slight blue flecks remaining for texture and visual appeal.
Transfer the blended cheese into a small serving bowl or form into a log using plastic wrap. Smooth the surface with a spatula.
Chill the assembled cheese in the refrigerator for at least 30 minutes to allow flavors to marry and firm up slightly. The spread can be held refrigerated up to 5 days in an airtight container.
To serve (optional)
Scatter toasted walnuts around the cheese and arrange crusty bread or crackers and fresh pear or apple slices for contrast. Serve immediately at room temperature for best flavor (remove from fridge 10–15 minutes before serving).
Leftovers: store in an airtight container in the refrigerator up to 5 days. Bring to room temperature before serving to restore creaminess.
