Truffle Goat Cheese Crostini

Method
Prepare Crostini
Preheat and slice
Preheat oven to 400°F (200°C). Slice the baguette into 1/3–1/2-inch (8–12 mm) diagonal slices for larger surface area.
Brush and toast
Arrange slices in a single layer on a baking sheet. Brush each slice lightly with extra-virgin olive oil (about 2 tablespoons total). Toast in the oven 6–8 minutes, turning once halfway, until edges are golden and centers are crisp but not browned too darkly. Remove and cool slightly.
Make Truffle Goat Cheese Spread
Soften and blend
Place the 8 oz goat cheese in a medium bowl. Let it sit at room temperature 10–15 minutes to soften for easier mixing.
Add flavorings
Into the softened goat cheese stir in 2 teaspoons truffle oil, 2 tablespoons honey, 1 teaspoon fresh thyme leaves, 1 teaspoon lemon zest, 1 teaspoon sea salt, and 1/2 teaspoon freshly ground black pepper. Mix until smooth and homogenous. Taste and adjust: add up to an additional 1 teaspoon honey if you want sweeter, or a few drops more truffle oil for stronger truffle aroma (use sparingly).
Optional texture
If you prefer a spread with a little more body, fold in 2–3 tablespoons of plain cream cheese or Greek yogurt; otherwise proceed as-is.
Assemble and Garnish
Make-Ahead & Storage
Chevre spread can be made up to 2 days ahead, covered and refrigerated. Bring to room temperature and stir before serving. Toast baguette just before serving for best texture; toasted slices can be stored in an airtight container for up to 12 hours to remain crisp.
