Preparation

Temper the ham

Remove Jamón Serrano from refrigerator 30–45 minutes before serving so it warms to room temperature — this brings out its aroma and softens fat for better flavor and texture.

Prepare tools

Place your sharp knife and cutting board on a stable surface. If using a bone-in piece, position it on a jamonero or a steady cutting board with the hoof or thicker end elevated for safe, even slicing.

Trim outer rind (if needed)

If the outer rind or excess hardened fat is uneven, carefully trim small areas with the tip of the knife to expose a flat surface for slicing. Keep most fat intact — it’s where much of the flavor lives.

Slice thinly

Using a long, very sharp slicing knife, cut paper-thin slices across the grain. Aim for translucent slices about 1–2 mm thick. Work from the exposed meat towards the bone (if bone-in). Arrange each slice flat on the serving platter, slightly overlapping in a fan or rosette so the fat and lean alternate visually.

Keep unused ham covered

If you have leftover jamón attached to a bone, cover the exposed cut surface with a thin layer of remaining trimmed fat or plastic wrap to prevent drying between servings.

Assemble Accompaniments

Slice the manchego

Cut manchego into thin wedges or small slices about 3–4 mm thick. Arrange on the platter near the ham so guests can pair bites.

Prepare bread

Slice the loaf into 1–1.5 cm slices. Optionally toast lightly so the interior is warm and the crust slightly crisp. Fan the slices on the platter or in a bread basket.

Arrange nuts, olives and fruit

Place Marcona almonds and olives in small bowls and set them on the platter. Arrange fresh figs or grapes in small clusters beside the ham for sweetness and contrast.

Finish with oil & seasoning

Drizzle 2 tablespoons extra-virgin olive oil over the manchego or bread if you like. For an extra acidic note, lightly sprinkle 1 teaspoon aged sherry vinegar or balsamic over the fruit or a few drops over the ham slices. Grind about 1 teaspoon of black pepper over the platter to taste. Garnish with thyme or rosemary sprigs.

Bring the platter to the table and encourage guests to enjoy jamón slices with cheese, bread, olives, almonds and fruit. Jamón Serrano is best eaten at room temperature so its savory, slightly sweet and nutty flavors are pronounced.
