Prepare cured meats

Keep Jamon Serrano refrigerated until 15–20 minutes before serving to allow flavors to open. Using a sharp knife or deli slicer, if not pre-sliced, slice Jamon Serrano paper-thin. Fan slices into loose ribbons or small piles for easy picking. Arrange prosciutto (if using) similarly and fold salami or coppa into small rosettes or stacks.

Room-temperature cheeses

Remove cheeses from refrigeration 30–45 minutes before serving so they come to room temperature. For Manchego and cheddar, cut into wedges or 1/4–1/2" slices that are easy to pick. For the soft Brie/Camembert, score the rind lightly or leave whole and provide a small knife for spreading.

Place Marcona almonds in a small pile or ramekin. Drain and place olives in a separate small bowl. Arrange cornichons, halved dried apricots/figs, and spoonfuls of quince paste or fig jam into small piles or ramekins. Put honey and whole-grain mustard into tiny dipping bowls and drizzle 1 tablespoon honey lightly over the Brie if desired.

Slice the baguette on the bias into 1/4"–1/2" slices. Lightly toast the slices until golden and crunchy. Arrange toasted slices and assorted crackers on the board near cheeses and spreads so guests can pair freely.

Assembly & Garnish

Select a large wooden board or platter. Start by placing cheeses spaced apart to act as anchors. Position small bowls (olives, mustard, honey) next to cheeses that pair well. Arrange the cured meats in-between cheeses, creating visual variety by fanning, folding or rolling. Fill remaining gaps with nuts, dried fruit, cornichons and quince paste. Drizzle remaining 1 tablespoon olive oil over the Manchego or around the board and sprinkle freshly ground black pepper lightly over the soft cheese. Tuck rosemary or thyme sprigs around the board for aroma and presentation.

Provide small serving knives for each cheese, cocktail picks for olives and cornichons, and spoons for jams and honey. Offer guidance (optional): pair Jamon Serrano with Manchego and a drizzle of honey or quince paste; pair salty meats with olives and whole-grain mustard.
