Method
Base & Milk
Combine milks
In a medium saucepan, combine 4 cups fresh goat's milk, 1 cup whole cow's milk (if using), and 1 cup heavy cream. Stir gently to mix.
Warm gently
Place saucepan over medium-low heat and warm the mixture slowly until it reaches 160°F (70°C) or is steaming and small bubbles appear at the edge. Do not boil — gentle steaming preserves the delicate goat flavor.
Sweetener & Acid Balance
Dissolve sweeteners
Add 1 tablespoon granulated sugar and 2 teaspoons honey to the warm milk. Whisk until fully dissolved.
Brighten with lemon
Remove the pan from heat and stir in 1 tablespoon fresh lemon juice. The small amount of acid will brighten the goat's milk flavor without curdling because the milk was not brought to a hard boil and acid is modest.
Flavoring & Brightness
Add vanilla and zest
Split and scrape 1 vanilla bean (or add 1 teaspoon pure vanilla extract) into the warm milk. Add 1 teaspoon fresh lemon zest and 1 teaspoon fine sea salt. Whisk to incorporate. Taste and adjust salt or lemon zest for balance: the goal is creamy, bright, slightly tangy.
Stabilizer (optional for very creamy texture)
Prepare slurry
If you want a slightly thicker, more stable texture, mix 1 teaspoon cornstarch with 1 tablespoon cold water until smooth to make a slurry.
Incorporate slurry
Return the saucepan to low heat. Whisk while slowly adding the cornstarch slurry. Continue to cook gently for 2–3 minutes until the mixture slightly thickens and coats the back of a spoon. Do not boil vigorously.
Finish & Serve
Strain and cool
Pour the finished caña de cabra through a fine-mesh sieve or cheesecloth into a heatproof bowl to remove vanilla pod bits and any coagulated bits. This yields a smooth, creamy liquid.
Chill
Cover and chill in the refrigerator for at least 2 hours until cool. For best texture, chill 4 hours or overnight. If a chilled drink is desired, serve over ice. If serving warm, reheat gently to serving temperature.
Garnish and serve
Before serving, stir and taste. Adjust sweetness or lemon if needed. Pour into cups and garnish with a pinch of finely chopped fresh mint or basil and extra grated citrus zest if desired.
