Prepare and portion beef
Place ground Angus beef in a medium mixing bowl. Add bread crumbs, Worcestershire sauce, garlic powder, onion powder, kosher salt, and freshly ground black pepper. Gently fold the mixture with your hands or a spatula just until combined; do not overwork the meat to keep patties tender.
Form patties
Divide the mixture into 12 equal portions (about 1.5 oz or 43 g each). Roll lightly into balls then flatten to 2.5–3 inch rounds, about 1/2 inch thick. Make a shallow center dimple in each patty with your thumb to minimize doming during cooking.
Cook patties
Heat a large skillet or griddle over medium-high heat. Add vegetable oil and swirl to coat. When shimmering, place patties on the hot surface without crowding (work in batches if needed). Cook 2–3 minutes on the first side until a deep brown crust forms. Flip and place a half-slice of cheddar (or 1/2 slice equivalent) on each patty, then cook another 1.5–2 minutes for medium doneness (adjust time for desired doneness). Internal temperature should reach 160°F (71°C) for well done. Remove patties to a plate and tent loosely with foil to keep warm.

While patties rest, whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, and black pepper in a small bowl until smooth. Taste and adjust seasoning; cover and refrigerate until assembly. This can be made several hours ahead to let flavors meld.

Spread about 1 tablespoon of the prepared burger sauce on the bottom half of each toasted bun. Place a lettuce leaf (if using) and a warm beef patty with melted cheddar on top. Add one dill pickle slice and a few thin red onion slices. Finish with a small dollop (~1/2 tsp) of sauce on the top bun, then close the slider.
Serve
Arrange sliders on a platter and serve immediately while hot. If preparing for a crowd, keep cooked patties covered in a low oven (200°F / 95°C) and toast buns just before serving so sliders remain juicy and warm.
