Bring to serving temperature

Remove the Jamón Ibérico slices (or whole leg) from the refrigerator 30–60 minutes before serving so the fat softens and aroma opens up. Optimal serving temperature is slightly below room temperature.

If using whole leg (tableside slicing)

Mount the whole leg on a jamonero (ham stand) with the hoof pointing up for immediate service. Use a long, flexible jamón knife to shave ultra-thin slices in a single stroke, rotating the leg as you work. Trim as needed; serve slices with some translucent fat attached for flavor. Reserve trimmed fat to rub on bread if desired.

If using pre-sliced jamón

Arrange slices in a single layer or slightly overlapping on a chilled or room-temperature wooden board or porcelain plate. Avoid piling slices to preserve texture and aroma.

Bread

Slice the rustic bread into 1–1.5 cm pieces. Lightly toast or char if desired (1–2 minutes per side) until warm and slightly crisp. Optionally rub the warm bread with a cut clove of garlic and drizzle a little olive oil.

Cheese & nuts

Slice the Manchego into thin wedges or small batons. Place toasted Marcona almonds in a small bowl on the board. These provide a complementary texture and nutty note that echoes the jamón's acorn-fed character.

Figs, jam & condiments

Halve fresh figs or spoon small quenelles of fig jam onto the board. Arrange quince paste (membrillo) or cornichons in small piles. Sprinkle cracked black pepper lightly over jamón if desired and scatter a few sea salt flakes to highlight the cured meat's fat.

Plating

Lay the jamón slices prominently on the board, leaving negative space for accompaniments. Group bread, cheese, nuts, figs, and condiments in separate clusters for easy picking. Drizzle 1–2 tbs extra-virgin olive oil lightly over the bread and a few drops over the Manchego if desired. Finish with microgreens or parsley for color.

Serving suggestions

Serve with small plates and forks for the accompaniments. Provide lemon wedges only if guests prefer a bright note; squeeze sparingly. Pair with chilled fino or manzanilla sherry, dry fino cava, or a light red such as Tempranillo crianza.

Storage and leftovers

Cover any remaining slices loosely with parchment or wax paper and refrigerate up to 3–4 days; bring back to serving temperature before eating. If you have a whole leg, follow producer instructions for sealing and storage to preserve quality.
