Prep

Toast bread

Butter one side of each of the three bread slices (total 3 sides will be buttered). Heat a skillet over medium heat. Place buttered side down and toast each slice until golden brown, about 2–3 minutes per side for even color. Remove and set aside.

Prepare produce

Wash and dry the lettuce. Core and slice the tomato into 1/4-inch rounds (about 4 slices). Pat the cooked bacon on paper towels to remove excess grease and keep warm.

In a small bowl, mix mayonnaise and Dijon mustard with 1/4 teaspoon of the salt and 1/4 teaspoon of the black pepper; set aside. Reserve remaining salt and pepper for tomato seasoning.

Assemble Clubhouse

First layer

Place one toasted bread slice buttered side down on your work surface. Spread about 1 tablespoon of the mayo-mustard mixture evenly over the top surface. Arrange half of the turkey (about 4 oz) in an even layer on the bread. Top with one slice of cheddar cheese.

Second layer

Place the second toasted bread slice atop the cheese, buttered side up so the unbuttered face receives the next spread. Spread another tablespoon of the mayo-mustard on top. Layer the remaining turkey (about 4 oz), the crisp bacon strips (4 pieces), and the lettuce. Season the tomato slices lightly with the remaining 3/4 teaspoon salt and 1/4 teaspoon black pepper, then place tomato slices over the lettuce. Add the second slice of cheddar if desired.

Top and press

Add the final toasted bread slice, buttered side up. Gently press down to compact the sandwich. If you prefer a traditional clubhouse presentation, insert 2 toothpicks or skewers through the sandwich to hold the three layers together (one at each end).

Finish & Serve

Using a sharp knife, slice the sandwich diagonally into two triangles (or into quarters if secured with two skewers). Transfer to a plate and serve immediately with a pickle spear and a cup of chips or fries on the side.

Notes: Adjust mayo and mustard to taste; substitute turkey with smoked turkey or roasted turkey for variation. For a warm variation, after assembling without the tomato and lettuce, grill the stacked sandwich in a skillet over medium-low heat, pressing gently and flipping once until cheese melts, then add tomato and lettuce after grilling.
