Form patty
Gently shape the 1/4 lb ground beef into a patty about 3.5–4 inches in diameter and about 3/4 inch thick. Make a shallow dimple in the center with your thumb to prevent doming during cooking.

Season
Season both sides of the patty with the kosher salt and black pepper just before cooking.

Cook patty
Heat a skillet or griddle over medium-high heat until hot. Add a thin smear of butter (about 1/2 tbs) to the pan and place the patty in the skillet. Cook about 3 minutes on the first side without pressing, until a brown crust forms. Flip and cook 2.5–3 minutes more for a medium doneness (adjust time slightly for well-done or rare).

Add cheese (optional)
If adding cheese, place the cheddar slice on the patty in the last 30–45 seconds of cooking and cover the pan briefly to melt.

Prep potato
Wash the 1/2 medium russet potato well (peel if desired). Using a mandoline or very sharp knife, slice the potato into very thin slices (about 1.5–2 mm).

Rinse and soak
Place the potato slices into a bowl of cold water and swish to remove excess starch. Let soak for 10 minutes, then drain and pat thoroughly dry on paper towels or a clean kitchen towel.

Heat oil
In a small heavy-bottomed saucepan or skillet, add about 1 cup neutral oil and heat to 350°F (175°C). If you don't have a thermometer, test by dropping one slice in; it should sizzle immediately and start to bubble.

Fry chips
Working in a single layer and not overcrowding, fry the potato slices for 1–2 minutes, stirring occasionally, until golden and crisp. Use a slotted spoon to transfer to a paper towel-lined plate to drain.

Season
While still hot, sprinkle the fried chips with fine sea salt. Let cool briefly; they will crisp further as they rest.

Serve
Serve the chips alongside the burger. For an upgrade to fries, substitute with 3/4 cup frozen or fresh fries and prepare according to package or fry instructions (not included here).
