Prepare bread
Lightly spread mayonnaise (optional) on the inside faces of both slices of sourdough. This creates an extra-brown, slightly tangy interior. If not using mayo, skip this step.

Butter the exterior
Spread the unsalted butter evenly on the outside face of each slice of sourdough (the sides that will touch the griddle). If butter is cold, soften slightly or melt and brush for even coverage.

Assemble sandwich
Place one slice of sourdough buttered-side down on a plate or cutting board. Lay two slices of American cheese on top so they slightly overlap and cover the bread. Season the cheese lightly with 1/4 tsp salt and a pinch of black pepper if using. Top with the second slice of sourdough, buttered-side up.

Cook first side
Place the assembled sandwich on the preheated griddle. Cook for 3–4 minutes, pressing gently with a spatula every 30–45 seconds to promote even contact. Watch for the bottom slice to turn golden brown.

Flip and cook second side
Carefully flip the sandwich and cook the second side for another 2–3 minutes, continuing to press gently and checking that the bread is golden and the cheese is melted. If the bread is browning too quickly before cheese melts, lower heat and cover the pan with a lid for 1 minute to trap heat and help melting.

Rest and serve
Remove the sandwich from the griddle and let it rest on a cutting board for 1 minute to allow the cheese to settle (this makes slicing neater). Slice diagonally if desired and serve warm.
