Method
Matcha Sponge
Prepare the Batter
Preheat the oven to 350°F (175°C). In a bowl, sift together cake flour, matcha powder, sugar, and baking powder. In another bowl, whisk eggs, milk, and vegetable oil. Combine wet and dry ingredients until smooth.
Bake the Sponge
Pour the batter into a greased cake pan and bake for 20-25 minutes, or until a toothpick comes out clean. Let cool completely before removing from the pan.
Blueberry Mousse
Prepare the Gelatin
In a small bowl, dissolve gelatin in water and let sit for 5 minutes. In a blender, blend fresh blueberries and sugar until smooth. Heat the blueberry puree in a saucepan, then add the gelatin mixture and stir to combine.
Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the blueberry mixture until well combined.
Chill the Mousse
Pour the mousse into individual serving glasses and refrigerate for at least 2 hours to set.
Blueberry Confit
Cook the Confit
In a small saucepan over medium heat, combine fresh blueberries, sugar, and lemon juice. Cook until the blueberries burst and the mixture thickens, about 10-15 minutes. Let cool before using.
Chocolate Crumb
Prepare the Crumb
In a bowl, mix chocolate cookie crumbs with melted butter until combined. Spread on a baking sheet and bake at 350°F (175°C) for 5-7 minutes.
Assembly
Layer the Dessert
Cut the matcha sponge into layers. Place a layer of sponge, then a layer of blueberry mousse, followed by blueberry confit. Repeat layers until all components are used, finishing with mousse on top.
Garnish and Serve
Sprinkle with chocolate crumb and dust with matcha powder before serving.
