Method

Prepare the Tuile

Make the Tuile Batter

In a bowl, whisk together the flour and powdered sugar. Add melted butter, vanilla extract, and egg whites. Mix until smooth.

Bake the Tuiles

Spoon the batter onto a baking sheet lined with parchment paper, spreading thinly. Bake at 350°F (175°C) for 5-7 minutes until golden. Let cool.

Make the Salted Caramel

Caramelize Sugar

In a saucepan, heat the granulated sugar over medium heat until melted and golden brown.

Add Cream and Butter

Remove from heat and carefully whisk in heavy cream and butter. Stir in sea salt and let cool.

Prepare the Chocolate Crèmeux

Combine Ingredients

Melt dark chocolate in a bowl. In a saucepan, heat cream until just boiling. Whisk egg yolks and sugar in a bowl.

Temper Eggs

Slowly pour hot cream into egg mixture, whisking constantly. Return to saucepan and cook until thickened. Combine with melted chocolate and cool.

Make the Whipped Caramel Ganache

Prepare Ganache

Heat cream and pour over dark chocolate in a bowl. Stir until smooth. Add salted caramel and refrigerate until set.

Whip the Ganache

Once set, whip the ganache until fluffy.

Bake Brownie Bites

Mix Brownie Batter

Melt the butter and mix with sugar and egg. Stir in flour, melted chocolate, and cocoa powder until combined.

Bake Brownies

Pour into a greased mini muffin tin and bake at 350°F (175°C) for 10-12 minutes. Let cool.

Assemble the Dessert

Plate the Dessert

On a plate, layer brownie bites, a dollop of chocolate crèmeux, and a drizzle of salted caramel. Top with whipped caramel ganache.

Sprinkle with toasted cocoa nibs and dust with cocoa powder.
