Prepare the Halibut

Preheat a grill or skillet over medium-high heat. Season the halibut fillets with olive oil, cumin, salt, and black pepper.

Cook the Fish

Place the halibut on the grill or skillet and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Warm the Tortillas

While the fish is cooking, warm the corn tortillas on a separate skillet for about 30 seconds on each side until they are pliable.

Prepare the Toppings

In a bowl, mix the diced pineapple with a pinch of salt and set aside. Shred the cabbage if not already done.

Assemble the Tacos

Once the fish is cooked, flake it into bite-sized pieces. On each tortilla, add a generous amount of shredded cabbage, flaked halibut, and a spoonful of pineapple. Drizzle with aji amarillo and scotch bonnet hot sauce to taste.

Serve the tacos warm with extra hot sauce on the side if desired.
