Preparation and Cooking
Prepare the Shrimp
In a bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. In another bowl, beat the eggs. Dip each shrimp in the flour mixture, then into the egg, and finally coat with bread crumbs.
Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
Prepare the Slaw
While the shrimp are frying, prepare coleslaw according to package instructions, or mix the coleslaw mix with your favorite dressing.
Serve
On a plate, serve the crispy fried shrimp alongside the coleslaw, cocktail sauce, and lemon wedges.
