Prepare ingredients

If using egg white, separate and measure 1/2 oz (about half an egg white). Measure gin, verveine liqueur (or verbena-infused syrup), and lemon juice. If you are using plain verbena syrup rather than a liqueur, add the 1/2 oz simple syrup from the Sweetening section to the shaker.

Dry shake

Add gin, verveine liqueur (or verbena syrup + simple syrup), lemon juice, and egg white to a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds. This 'dry shake' emulsifies the egg white and builds a silky foam.

Wet shake

Open the shaker, add the large ice cubes, then seal and shake hard for 10–15 seconds more until the outside of the shaker is very cold (this chills and dilutes the drink appropriately).

Strain

Double-strain the cocktail through a fine mesh strainer into a chilled coupe or Nick & Nora glass to remove small ice shards and produce a smooth texture.

Garnish & Finish

Express the oils of the lemon twist over the surface of the cocktail by holding the twist over the glass and pinching so the peel faces down, then run the twist around the glass rim and lay it on top of the foam or perch it on the glass edge.

Gently slap the lemon verbena sprig between your palms to release its aroma and lightly rest it on the foam as a fragrant garnish. Serve immediately.
