Brew Espresso or Coffee

Pull two shots (about 60 ml) of freshly brewed espresso. If you don't have an espresso machine, brew 1 cup of very strong coffee (use 1 heaping tablespoon of fine coffee per 6–8 oz water) so final strength resembles espresso.

Chocolate Mixture

In a small heatproof cup or saucepan, combine the unsweetened cocoa powder and granulated sugar. Add the hot water (about 2 tablespoons) and whisk vigorously until you have a smooth, glossy chocolate syrup with no lumps (about 15–20 seconds). Taste and adjust sugar if you prefer sweeter mocha.

Milk / Froth

Heat the milk to about 150°F (65°C). You can do this on the stovetop in a small saucepan over medium-low heat (watch carefully so it doesn't scald) or in a microwave for 30–45 seconds. Stir in the vanilla extract. Froth the milk using a steam wand, handheld milk frother, or by vigorously shaking the heated milk in a tightly sealed jar for 30–45 seconds until foamy.

Assembly & Garnish

Pour the prepared chocolate syrup into a 10–12 oz mug. Add the hot espresso (or 1 cup strong coffee) and stir to combine thoroughly with the chocolate mixture.

Pour the heated milk into the mug over the espresso–chocolate mixture, holding back the foam with a spoon. Spoon the milk foam on top.

Top with 2 tablespoons whipped cream if desired and finish with a sprinkling of chocolate shavings or a light dusting of cocoa powder.
