Method
Make Simple Syrup (if using homemade)
Simple syrup
Combine 1/4 cup sugar and 1/4 cup water in a small saucepan. Heat gently, stirring until sugar is completely dissolved. Remove from heat and let cool to room temperature. Chill if not using immediately.
Assemble Diabolo
Prepare glass
Fill a tall glass with 1 cup of ice cubes to chill and keep the drink cold.
Add lemon and sweetener
Pour 1/2 cup (about 120 ml) fresh lemon juice into a measuring cup or directly into the glass. Add 1/4 cup (60 ml) simple syrup (store-bought or the cooled homemade syrup) and stir briefly to combine.
Add sparkling water
Slowly pour 2 cups (about 480 ml) cold sparkling water into the lemon-syrup mixture. Stir gently once or twice to mix without flattening the bubbles.
Add chosen syrup flavor
Choose one syrup option: - For Grenadine Diabolo: drizzle 2 tablespoons grenadine into the glass; it will sink and create a red gradient. - For Lemon Diabolo: add 2 tablespoons lemon syrup for an extra bright lemon flavor. - For Mint Diabolo: add 2 tablespoons mint syrup and gently stir 1–2 times to distribute the mint flavor.
