Crêpe batter
Mix dry ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, and salt until evenly combined.
Combine wet ingredients
In a separate bowl or large measuring cup, whisk the eggs lightly, then add the milk, melted butter and vanilla extract. Whisk until combined.
Make a smooth batter
Create a well in the center of the dry ingredients and pour in the wet mixture. Whisk steadily from the center outward until a smooth, lump-free batter forms. If you prefer, blend briefly (6–10 seconds) in a blender for an ultra-smooth batter. The batter should be thin and pourable — about the consistency of heavy cream. If too thick, add up to 2–4 tablespoons milk.
Rest the batter
Cover the bowl and let the batter rest in the refrigerator for 30–60 minutes. This relaxes gluten and yields tender crêpes. If short on time, you can proceed after 15 minutes.
Cook crêpes
Pour or ladle about 1/4 cup (adjust depending on pan size) of batter into the center of the pan and immediately tilt and swirl the pan to spread the batter into a thin, even circle (~8–10 inches). Cook 45–60 seconds until the edges lift and the bottom is lightly golden. Using a spatula, flip and cook the second side for 10–20 seconds. Transfer cooked crêpe to a plate and repeat, stacking finished crêpes on a warm plate. Re-grease the pan as needed. Makes about 10–12 thin crêpes.

Make chocolate sauce
Place the chopped dark chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (small bubbles at the edge), then remove from the heat. Pour the hot cream over the chocolate and let sit for 1 minute to soften the chocolate. Stir gently from the center outward until smooth and glossy. Stir in the butter and powdered sugar (if using) until incorporated. Keep warm over a very low bain-marie or set aside at room temperature; if it firms too much, gently rewarm until spreadable.
Adjust sweetness/consistency
If the sauce is too thick, thin with 1–2 teaspoons warm cream or milk. If too thin, cool briefly to thicken or add a bit more chopped chocolate and let it melt in.
Chantilly (sweet whipped cream)
Chill equipment
For best results, chill the mixing bowl and whisk/beaters in the freezer for 10 minutes before whipping.
Whip cream
Pour the cold heavy cream into the chilled bowl. Add the powdered sugar and vanilla. Whip with an electric hand mixer or stand mixer on medium-high speed until soft peaks form (the cream holds shape but still looks soft). Do not overwhip or it will become grainy. Keep chilled until ready to serve.
Assembly & serving
Fill and fold
Place a warm crêpe on a plate. Spoon 1–2 tablespoons of the warm chocolate sauce onto one half of the crêpe (or spread over the center). Fold the crêpe in half, then fold again into a triangle or roll it. Repeat with remaining crêpes.
Top with chantilly
Pipe or dollop a generous spoonful (about 1–2 tablespoons) of chantilly on each crêpe or serve alongside. For a classic presentation, place crêpe on plate, add chocolate drizzle, then a rosette of chantilly on top.
Garnish and finish
Dust lightly with confectioners' sugar and a pinch of cocoa powder or scatter extra chopped chocolate. Add fresh berries or banana slices if using. Serve immediately while crêpes are warm and chocolate sauce is glossy.
