Hot Chocolate Base

Combine dry ingredients

In a medium saucepan, whisk together the cocoa powder, granulated sugar and salt until there are no lumps.

Warm dairy

Pour in the whole milk and heavy cream gradually while whisking to form a smooth slurry. Place the saucepan over medium-low heat.

Heat gently

Warm the mixture, stirring frequently, until it is hot and steaming but not boiling and small bubbles form at the edge (about 5–7 minutes). Do not let it boil to avoid scalding or separating.

Add chocolate

Remove the pan from heat and add the finely chopped bittersweet chocolate. Whisk until the chocolate is fully melted and the mixture is smooth and glossy.

Finish and season

Return to very low heat briefly if needed to keep the chocolate melted, then stir in the vanilla extract. Taste and adjust sweetness if desired.

Garnish & Serve

Ladle the hot chocolate into 4 mugs (about 1 cup each).

Top each mug with a dollop of whipped cream and a sprinkle of mini marshmallows or chocolate shavings/cocoa powder as desired.

Serve with a cinnamon stick in each mug for stirring, if using. Serve immediately while hot.
