1. Chill glass and beers

Place the glass and all beers in the refrigerator for at least 30 minutes before serving so everything is well chilled. Slightly less cold for the stout so flavors carry (about 40–45°F / 4–7°C).

2. Optional salt rim

If using salt: pour the coarse salt onto a small saucer. Rub the orange twist (peel) around the glass rim to moisten, then dip the rim into the salt to coat one section lightly. This provides a rotating contrast when you sip around the glass.

Building the Rotating Beer

3. Add lime and syrup

Into the chilled glass, pour 0.5 fl oz fresh lime juice and 0.25 fl oz simple syrup. Swirl gently to combine. These will add a bright, slightly sweet base that complements each beer as you rotate sips.

4. First pour — lager

Hold the glass at a slight angle (about 45°). Slowly pour 12 fl oz of the light lager down the side of the glass to preserve carbonation and create a clean base layer. Leave a small head (~1/2 inch).

5. Second pour — amber

Gently tilt the glass upright and, using a bar spoon held just above the surface, slowly pour 6 fl oz of amber ale down the spoon into the center so it layers modestly and integrates with the lager. This adds malt and caramel notes to the mid-palate.

6. Third pour — stout

Finish with 2 fl oz of stout or porter poured very slowly over the back of the bar spoon into the center. The darker stout will float and create a visual top ring and concentrated roasty notes for the first sips.

7. Set the rotation

Gently set the glass down and let the layers settle for 30–45 seconds. The idea is not a strict separation but a gentle gradient so that when you rotate the glass (turning it slowly while sipping around the rim) your taste experience moves from bright lager through malty amber to roasty stout.

Express the orange twist over the drink by holding the twist over the glass and pinching to release oils, then drop it into the drink or lay it on the rim. Lightly slap the mint sprig to activate aromatics and rest it on top or along the rim.

9. Serve and rotate

Serve immediately. To experience the 'rotating' flavor progression, take small sips while slowly turning the glass (about 90–180° rotation over several sips). Alternatively, drink from different points on the rim to encounter different beer concentrations.

10. Notes on balance

If the drink tastes too sour, add 0.25 fl oz more simple syrup next time. If too sweet, reduce syrup or increase lime by 0.25 fl oz. Swap beer styles to tailor flavor: a pilsner for crisper start, a brown ale for sweeter middle, or an imperial stout for a bolder finish (adjust volumes to keep total ~20 fl oz).
