Dooboo Kimchi Bomb Recipe
Stir-fried kimchi with Dooboo in sesame oil. Served with japchae, fresh lettuce, cucumbers, steamed broccoli, boiled egg, two mandoo dumplings.

Method
Dooboo kimchi stir-fry
Prepare tofu
Press the tofu for 10–15 minutes to remove excess water if not already pressed. Cut into roughly 1/2-inch cubes and pat dry with a paper towel.
Brown tofu
Add the tofu cubes in a single layer. Let sit undisturbed 2–3 minutes until the bottom is golden, then gently turn to brown other sides, about 4–5 minutes total. Remove tofu to a bowl and set aside.
Sauté aromatics and kimchi
Lower heat to medium. Add 1 tbs sesame oil to the same skillet. Add the minced garlic and sliced white parts of the green onion; sauté 20–30 seconds until fragrant. Add the chopped kimchi and cook, stirring, 2–3 minutes until it softens and starts to brown slightly at the edges.
Season and combine
Stir in the kimchi juice, 1 tsp soy sauce, and 1 tsp gochugaru (if using). Return the browned tofu to the pan and gently fold to combine, taking care not to break the tofu cubes. Cook another 1–2 minutes until everything is heated through and coated in sesame oil.
Finish
Turn off the heat. Stir in the sliced green onion greens, 1 tsp toasted sesame seeds, and 1/4 tsp black pepper. Taste and adjust seasoning with a pinch more soy sauce or kimchi juice if needed. Keep warm until serving.
Japchae (quick assembly)
If dangmyeon (glass noodles) are not already cooked, cook according to package instructions: boil until translucent (6–8 minutes), drain, rinse under cold water, and drain well. Toss warm noodles with 1 tsp sesame oil, 1 tsp soy sauce, and 1/2 tsp sugar. Keep portion warm alongside the kimchi-dooboo.
Vegetable sides
Wash and dry the lettuce leaves and arrange on a serving plate. Slice cucumbers thinly and arrange beside the lettuce. Steam broccoli until bright green and tender-crisp (2–3 minutes in boiling water or a steamer), then drain and arrange on the plate.
Egg & mandoo
If the egg is not yet cooked: bring a small pot of water to a boil, gently add the egg, boil 9–10 minutes for hard-boiled, then transfer to an ice bath, peel, and halve if desired. Place one peeled boiled egg (halved or whole) on the serving board.
Cook the mandoo: heat 1 tsp neutral oil in a small nonstick pan over medium heat. Add mandoo and pan-fry 1–2 minutes until bottoms are golden, then add 2–3 tbs water, cover, and steam 3–4 minutes until cooked through. Remove lid and crisp any remaining moisture for 30–60 seconds. Place two mandoo on the plate next to the egg.
Plating & finishing
Arrange a generous scoop (about 3/4 to 1 cup) of the dooboo kimchi stir-fry on the plate. Add a 3/4 cup portion of japchae beside it. Arrange lettuce leaves, cucumber slices, and steamed broccoli around the main items. Add the halved boiled egg and two mandoo dumplings to the plate. Sprinkle an extra pinch of toasted sesame seeds over the kimchi and japchae and drizzle optional gochujang or place ssamjang on the side for dipping.
