Method
Brewing green tea (standard method)
Measure water
Measure 240 ml (8 fl oz) of filtered water per cup of tea you plan to brew.
Heat water
Bring the water to a temperature of about 75–80°C (167–176°F). If you don't have a thermometer, heat until small bubbles start forming and just before a full rolling boil.
Warm teaware
Pour a small amount of the hot water into your teapot or cup, swirl, and discard. This warms the vessel and helps maintain temperature during brewing.
Pour water over leaves
Pour the 75–80°C water directly over the leaves to promote even extraction.
Steep
Steep the tea for 1.5–3 minutes depending on the tea type and desired strength. Delicate sencha or gyokuro: 1.5–2 minutes. Robust greens: up to 3 minutes. Avoid steeping longer to prevent bitter, astringent flavors.
Remove leaves
Remove the infuser or strain the tea into a cup immediately at the end of the steep time to stop extraction.
Brewing white tea (alternate method)
Measure and heat water
Measure 240 ml filtered water and heat to 80–85°C (176–185°F). White teas tolerate slightly higher temperatures than delicate greens but still should not be boiling.
Warm teaware
Warm your teacup or pot briefly with hot water, then discard the warming water.
Pour and steep
Pour the hot water over the leaves and steep for 3–5 minutes depending on variety and preference. Shorter (3 min) for lighter flavor; longer (4–5 min) for fuller flavor. White tea is generally forgiving but long steeping can increase strength without much astringency.
Strain and serve
Remove leaves or strain the tea, taste, and add up to 1 tsp honey if desired. Serve hot.
